FROZEN KIWI CREAM
`~*`~*`~*`~*`~*`~*`~*`~*`~*`~*
PREPARATION TIME: 25 min
Cooking Time: 10 Mins
Freezing Time: 2-4 Hours


For 4 Servings you will need:

3 Kiwi Fruits (it really reads Kiwi Fruits)
2 eggs, separated
1/8 tsp. salt
1 Tbsp. Cornstarch
½ tsp. vanilla extract
1 cup milk, scalded
½ cup sugar
¼ cup whipping cream, whipped stiff
Mandarin oranges and mint sprig for garnish

TIPS:  If custard is frozen solid remove from freezer 20 min before you plan to serve it to allow time to soften.

Preparation:
 1~ Put 2 kiwi fruits into small saucepan. (Reserve other kiwi fruit for garnish). Cover with water. Bring to a boil. Reduce Heat. Simmer for 10 min. Peel and puree. Set aside.
 2~ Beat egg yolks with salt, cornstarch and vanilla. Beat in milk. Place over medium heat and cook, stirring, until thickened. Add ¼ cup of the sugar. Set aside to cool.
 3~ Beat egg whites until foamy. Gradually add remaining sugar. Beat until stiff. Fold egg whites into cooled yolk mixture. Fold in whipped cream and kiwi puree.
 4~ pour into serving bowl. Cover and freeze 2 - 4 hours. Cream is best when frozen just to stage where it is easy to spoon, firm but not hard.
 5~ To serve, peel and slice reserved kiwi fruit. Arrange around bowl. Garnish with mandarin oranges and mint sprig

For 8 servings: Double the ingredients.

Succulent Country Ribs Recipe

Ok, I have to put up one more today because it sounds really yummy!
Just look at its title it starts with succulent
Ok, this is my kinda cooking! 
Alright, I can't lie, it's only when my husband isn't home.
Yes, he does all of the cooking and baking.

 Here are country ribs without all the work. 
 No broiling or boiling, just brown the ribs,
cover with tasty homemade sauce and bake!


Succulent Country Ribs
Preparation time: 20 mins
Oven temperature: 325 degrees F
Baking time: about 1 1/2 hours

For 4 servings you will need:
3-4 lbs country-style pork ribs
1 Tbsp. oil
1/2 Cup soy sauce (it reads Mild soy sauce, but what do I know I thought soy sauce was soy sauce)
1/3 Cup Ketchup
1 tsp. dry mustard
2 Tbsp. brown sugar, packed
1 clove garlic, minced or pressed
1/4 tsp. black pepper
1 tsp. chili powder ~ (Few dashes hot pepper sauce and / or Cayenne pepper, optional)

Preparation:

1. Cut off excess fat from ribs.  Heat oil.  Brown ribs and place them in a roasting pan.

2. Combine soy sauce, catsup, mustard, brown sugar, garlic, black pepper, chili powder, hot pepper     sauce and cayenne.  Pour sauce over ribs, turning to coat evenly.

3. Cover with foil and bake at 325 degrees F, for 45-50 mins.  Uncover.  Spoon sauce over ribs, leaving uncovered bake 45-50 mins longer until ribs are tender, a rich brown and begin to crisp.

Cheesy Eggplant Sticks Recipe

I bought an old box and to my surprise inside there were tons of old recipes.  I've been flipping through them and decided to share.  I must be hungry because I don't even care for eggplant and these sounded good to me!
Cheesy Eggplant Sticks
Preparation time ~ 10 mins
Broiling time ~ 10-12 mins (preheated broiler)

For 4 Servings you will need:
 1 ~ regular or 8 Japanese eggplants
1/2 Cup butter or margarine, melted
1/4 Cup grated onion
2 cloves garlic, minced or pressed
1 1/2 - 2 Cups grated Cheddar Cheese (you can substitute any hard cheese)

Preparation:
1. Peel and quarter eggplant lengthwise.  If using regular eggplant, cut into smaller wedges. 
    Place on an ungreased baking sheet.
2. Mix butter, onion and garlic. Brush mixture on eggplant sticks
3. Broil eggplant about 5 - 7 mins. Turn. Brush with butter and broil an additional 5 mins longer.
4. Sprinkle with cheese.  Broil until cheese melts and serve immediately.

How - To Remove Stains from your CORNING WARE

Difficulty: Moderately Easy

Instructions

Things You'll Need:

  • Rubber gloves
  • Newspaper
  • Oven cleaner
  • Trash bag
  • Dish pan
  • 1/4 cup white vinegar
  • 1 tsp. hand dishwashing liquid
  • Dish scrubber
  • Kitchen towel

  1. Place rubber gloves on your hands to protect your skin from any chemicals. Open windows or turn on a ventilation fan in the kitchen to keep fresh air in the room during the stain-removal process.
  2. Set your stained Corning Ware on some old newspaper on a flat work surface. Coat your Corning Ware with oven cleaner. Place the Corning Ware in a trash bag and seal the bag.
  3. Leave your Corning Ware sealed in the trash bag overnight. The oven cleaner breaks down and loosens the stains during this time, making them easier to remove.
  4. Take the sealed bag with the stained Corning Ware inside outdoors. Remove the Corning Ware from the trash bag and set it in a dish pan of hot water.
  5. Add 1/4 cup white vinegar and 1 teaspoon hand dishwashing liquid to the hot water in the dish pan. Scrub the Corning Ware with a dish scrubber to remove the stains loosened by the oven cleaner.
  6. Rinse well with plain water.  Make sure you get off all of the chemicals and dry with a clean kitchen towel.

Bavarian Chocolate Cake


Preparation time: 20 mins.
Oven Temp: 350 degrees F
Baking Time: 1hr

For 1 cake, 8 Servings, you will need:

6 oz. semisweet chocolate, dark
4 oz. chocolate milk
2 Tbsp. water
1 cup butter, room temp
2 cups granulated sugar
4 eggs
1 Tbsp. orange juice
1 Tbsp. Grated orange peel
1/2 tsp. salt
2 1/2 cups all - purpose flour
1/1 tsp. baking soda
1 cup butter milk or sour cream
Powdered sugar to dust

Preparation
1.   In medium sauce pan melt together chocolate and water, stirring constantly.2.   In large bowl cream together butter and sugar until light and fluffy.
3.   Add eggs, one at a time. Blend in orange juice and orange peel.
4.   Stir in cooled chocolate
5.   Sift together flour, salt and baking soda
6.   Add flour mixture alternately with buttermilk or sour cream to egg-butter mixture, blending well.
7.   Pour batter into a well-greased and floured tube pan, about 10 inches
8.   Bake at 350 degrees F for about 1 hour or until pick inserted in the center comes out clean
9.   Let cake cool in pan for 15 minutes.  Turn out onto rack and let cake cool completely. 
10. Dust with powdered sugar.
11. Serve with fresh fruit
